Taste the Rainbow

'Tis still the season for Birthdays. For my friend that is a lover of Unicorns, Rainbows, and all things magical, I thought it was only appropriate to make Rainbow Cupcakes. Now let me be completely clear about this; you can make these. They're really not too difficult. However, they are time consuming, so be sure to set aside at least an hour- hour and a half. The first step is to follow this Recipe, but with these cupcakes, the batter never seems to go as far, so double it.

Next, split the batter as equally as possible into five separate bowls. Color the batters purple, blue, green, yellow, and red. Be generous with your food coloring to get the colors as bright as possible. I'm talking, looks-like-finger-paint bright.

Fill cupcake pans with liners- you want the cheap paper ones, so that the colors of the cupcake stain the paper and show through. carefully spoon enough purple batter into each liner, using just enough to cover the bottoms of the liners. continue with each color in order using just enough to cover the previous layer. Don't rush it, let each layer settle before adding the next or they'll just run together. Fill the liners all the way to the top, these cupcakes look better 'mushroomed' over.

Let Bake for 25 minutes on 350 degrees until firm, and a toothpick comes out clean.

These cupcakes have so much color to them already, that they look best with a plain white buttercream icing piped on top. Nice and simple.

Serve them on an equally colorful platter, and watch them disappear! Enjoy!
